Lunch and Dinner Waffle Recipes

Waffles aren’t just for breakfast any more. They can be enjoyed throughout the entire day for lunch or dinner. The following recipes are offered as options to replace the usual sliced bread normally used to make sandwiches.


Besides using these waffles for sandwiches you can also eat them with salad toppings to suit individual tastes. Waffle sandwiches are made the same way as you would make a traditional sandwich with sliced bread.

What to put into a waffle sandwich?


Favorite waffle sandwich fillings are: - peanut butter and bananas,
- peanut buter and deli meats, such as turkey, ham, chicken, beef and cold cuts,
- deli salads, like tuna, chicken, turkey or shrimp salad,
- also add onions, lettuce, tomatoes, olives, peppers or pickles,
- you can also add mayo,
- mustard,
- ketchup,
- or whatever other condiment choices you and your family like.

Oh, this is not a list of everything that you should put into one waffle sandwich. Just pick things that you like and use them. Leave the rest outside of your waffle sandwich:).

Since the waffles have a different taste and texture than regular sliced bread, you may want to experiment a bit to determine which condiments and other add-ons work best.

PLAIN WAFFLE RECIPE

Just like sliced sandwich bread, waffle sandwiches can be made with a variety of different types of waffles. This basic traditional waffle recipe is great for any meal. It is easy to dress up without overpowering the taste of sandwich fillings or toppings.

Plain waffle recipe ingredients
- 2 eggs
- 2 cups all-purpose flour
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1 tablespoon white sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract

Instructions
1. Preheat waffle iron.

2. Beat eggs in large bowl with hand mixture until fluffy.

3. Stir in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla and mix by hand or with electric mixer until smooth.

4. Coat waffle iron with a thin layer of oil or non-stick cooking spray if needed.

5. Pour batter onto waffle iron and cook until golden brown.


BEER BATTER WAFFLES

This might seem like it's a recipe for beer lovers but actually beer is here for the fluffiness not for the taste. You can taste it a little bit though. So if you think you wouldn't like the beer taste in your waffles try something else (you can try and replace beer with sparkling mineral water).

Beer waffle recipe ingredients
- 2 cups self-rising flour
- 1 can or bottle of beer [12 ounces]
- 1/2 cup unsalted butter, melted
- 1/4 cup milk
- 2 eggs – separated
- 1 tablespoon honey
- 1 teaspoon vanilla extract

Instructions 1. Preheat waffle iron and coat with oil or non-stick cooking spray if necessary.

2. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl and stir until smooth.

3. Set the batter aside.

4. Beat egg whites in a separate bowl until stiff peaks form.

5. Fold egg whites into batter.

6. Pour onto the waffle iron and cook until crisp.


SOUR CREAM WAFFLE RECIPE

This versatile waffle is great any time of day. Top it with butter and syrup and it’s ideal for breakfast. However, when you leave off the customary breakfast toppings and serve sour cream waffles for lunch or dinner, you will be amazed at how easily they make the transition from morning to mid-day or evening.

Sour cream waffle recipe ingredients
- 1 cup water
- 1/2 cup sour cream
- 1/2 cup plain yogurt
- 1/4 teaspoon white vinegar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs, beaten

Instructions
1. In a bowl, whisk all wet ingredients – water, sour cream, yogurt, and vinegar.

2. Sift dry ingredients – flour, baking powder, baking soda, and salt – in a large bowl.

3. Beat eggs and stir into sour cream mixture.

4. Blend into flour mixture and stir by until smooth.

5. Cook on a lightly greased waffle iron until golden brown.

TUNA SALAD RECIPE


Tuna salad is an excellent hot weather lunch or dinnertime treat. Whipping up a tasty tuna salad is quick and easy.

Tuna salad ingredients
- 2 cans [6.5 ounces] of tuna fish packed in water
- 1 hard boiled egg – chopped finely
- 1/2 cup sweet Vidalia chopped onion
- 1/2 cup green bell pepper – chopped finely
- 1/2 cup celery – chopped
- 2 tablespoons sweet relish
- 2 tablespoons mayonnaise
- Salt and pepper to taste
- 4-5 leafs Romaine lettuce [optional]

Instructions
1. Drain tuna.

2. Discard liquid and empty contents of cans into a small bowl.

3. Flake tuna fish with a fork.

4. Add onions, egg, bell pepper, celery, salt and pepper and mix thoroughly.

5. Stir in mayonnaise.

6. Add more mayonnaise until desired consistency is achieved.

7. Chill for at least 30 minutes.

8. Rinse lettuce leafs and pat dry.

9. Place lettuce leafs atop waffles and scoop salad onto lettuce.

This will make enough salad to feed four people.


CHICKEN or TURKEY SALAD RECIPE


Tarragon adds an interesting twist to this traditional delicatessen classic. The most difficult part about this is deciding whether to have it with your waffles for lunch or for dinner :).

Chicken or turkey salad recipe ingredients
- 1 chicken breast – boiled
- 1 hard boiled egg – finely chopped
- 2 tablespoons sweet relish
- 1 teaspoon tarragon
- 5-6 leafs of Romaine lettuce [optional]
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green bell pepper
- 4 tablespoons mayonnaise
- Salt and pepper to taste

Instructions
1. Chop chicken into small cubes.

2. In a medium sized mixing bowl, stir chicken, egg, relish, onion, bell pepper and tarragon.

3.Add mayonnaise salt and pepper.

4. Stir, making sure all chicken is evenly coated.

5. Add additional mayonnaise if necessary to achieve desired consistency.

6. Chill at least one hour.

7. Rinse lettuce leafs and pat dry.

8. Place lettuce leafs atop waffles and scoop salad onto lettuce.

Serves 6.


SHRIMP SALAD RECIPE


Seafood seasoning and capers give an unanticipated punch to this otherwise mild salad selection.

Shrimp salad recipe ingredients
- 1 pound small to medium shrimp – boiled, peeled and deveined
- 1 hard boiled egg – finely chopped
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped celery
- 1 teaspoon seafood seasoning
- tablespoon small capers – drained and rinsed
- 3 tablespoons mayonnaise
- Salt and pepper to taste
- 5-6 leafs of Romaine lettuce [optional]

Instructions 1. Stir shrimp, egg, onion, bell pepper, celery, seafood seasoning and capers together in a mixing bowl.

2. Add mayonnaise, salt and pepper.

3. Stir in additional mayonnaise if necessary in order to achieve desired consistency.

4. Chill at least 1 hour.

5. Rinse lettuce leafs and pat dry.

6. Place lettuce leafs atop waffles and scoop salad onto lettuce.

Serves 6.

Although we don't like to admit it, there are times when you need to eat something other than waffles.
